Odd Eats | Quarantine Creations - Pickled Onions
It’s funny where a random idea will take you, even when you’re at home bored. One rainy day early in Covid quarantine, I was planning on making ramen for dinner & decided to quickly pickle a shallot for a couple hours… just out of curiosity. It’s something I’d had at restaurants but never tried making at home.
Needless to say I absolutely fell in love with them & decided it was time to start pickling a bit more! While this may not seem weird to many, I’ve definitely gotten some strange responses from friends about this funky treat.
How’d I do it?!
Well… I brought to a boil a mix of apple cider vinegar, water, sugar, salt, pepper, and other spices (it’s changed from batch to batch). The best part is that they go well on just about anything!
Sandwiches
Ramen
Quesadillas
Tacos
Eggs
You name it… they belong! (okay, okay, except maybe on cereal. That’s just strange).
